Monomer flavor refers to the flavor compound with single component and clear molecular structure, which is the basic raw material for preparing various essence. Unlike natural essential oils (mixtures containing hundreds of ingredients), monomeric fragrances are pure single aromatic chemicals.

A single compound obtained by separating and purifying natural spices (essential oils, extracts, etc.) through physical or chemical methods

Physical methods: fractionation, freezing, recrystallization

Chemical methods: Boric acid ester method, phenol sodium salt method, sodium bisulfite addition method

2. Synthetic flavors (artificially synthesized monomers)

The spice compounds prepared by chemical synthesis methods can be divided into:

Hydrocarbons: terpenes, aromatic hydrocarbons

Alcohols: Isopentanol, Phenylethanol, Vanillin (synthetic method)

Aldehydes: citral, citral, benzaldehyde, decanal

Ketones: menthone, ionone, muscone, isophorone

Esters: ethyl acetate, linalool acetate, methyl salicylate
